I love homemade granola! Ok, I love store-bought granola, too. When I saw this recipe for almond cranberry granola I just had to try it! Homemade granola is more nutritious and more economical than store brought granola. And here in the middle of the COVID-19 quarantine, homemade is the obvious choice. The Healthy Maven has amazing granola recipes, and this is a slightly different version of the her almond cranberry granola.
Preheat oven to 300 degrees F.
In a large bowl combine oats, almonds, cinnamon and salt; zest orange on top. Combine oil, pumpkin puree, honey/molasses and orange juice. Microwave for one minute on high; add extract and stir to combine. Pour wet ingredients over dry and gently stir until well coated. Stir in egg white, if using; egg white will help create crunch clusters but is completely optional. Spread granola onto baking pan sprayed lightly with cooking spray or lined with parchment paper.
Bake for 15 minutes. Stir/turn granola and bake for another 15 minutes or until granola is slightly browned and dry. Allow to cool completely before storing in airtight container. Mix dried cranberries into cooled granola or mix in as served upon serving.
Serving suggestions: I usually omit the cranberries. This granola is delicious hot or cold!
Warm: I love to slightly thaw frozen peaches, top with granola and milk, then warm in microwave for one minute on high.
Top with dried blueberries or other dried fruit.
Cold: Add your choice of fresh or dried fruit, cover with milk, enjoy!
